Pumpkin Spice Ice Cream

I’ve been in a pumpkin spice mood. I made some pumpkin spice muffins. And some coffee cake.

But this week it’s ice cream, because, in addition to the yen for pumpkin spice, I’ve been in an ice cream kind of mood lately.

So - pumpkin spice ice cream, a flavor that suits the season and pleases my palate. I served it with dates, which was a delicious combo.

Treat yourself to some. It’s easy to make and because we all might be stuck in for a while maybe you have some time on your hands. It will give you something to do and something delicious to end a meal. Or have as a snack.

If you don’t have an ice cream machine, follow the directions here:

PUMPKIN SPICE ICE CREAM

  • 1 cup pureed pumpkin

  • 1/2 teaspoon ground ginger

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/8 teaspoon ground cloves

  • 1/4 teaspoon salt

  • 2-1/2 cups cream

  • 1 cup brown sugar

  • 4 large egg yolks

  • 1 teaspoon vanilla extract

Place the pumpkin, ginger, cinnamon, nutmeg, cloves and salt in a bowl and stir the ingredients until thoroughly blended. Set aside. Heat 2 cups of the cream until the liquid is warm and bubbles appear on the side of the pan. While the cream is cooking, place the brown sugar and egg yolks in the bowl of an electric mixer (or use a bowl and hand mixer) and beat for 3-4 minutes, scraping the bowl occasionally, or until light, fluffy and well blended. Gradually add the warmed cream and stir for 1-2 minutes to blend the ingredients thoroughly. Pour the liquid into a saucepan and cook over medium heat, stirring frequently, for about 8-10 minutes or until the mixture has thickened enough to coat the back of a spoon. Remove the pan from the heat. Stir in the remaining cream, the vanilla extract and the pumpkin mixture. Mix until well blended; refrigerate for at least 2 hours or until chilled. Place in an ice cream maker and churn according to manufacturer’s instructions. When the ice cream has thickened but is still soft, add the cranberry mixture and continue churning until the ice cream is thick. Spoon the soft ice cream into a container. Place in the freezer until very cold and firm.

Makes about 6 cups

Pumpkin Raisin Muffins

A few days ago someone on social media alerted the world to Oscar Mayer Pumpkin Spice Bologna.

No.

Just no. Just absolutely no.

Pumpkin spice doesn't belong in bologna. It doesn't even belong in the same sentence.

In fact, there is way too much "pumpkin spice" out there, in everything. 

However, pumpkin spice in muffins is a pretty good idea. It is pumpkin season, after all. And spices such as cinnamon, nutmeg and allspice do give the batter a welcome warmth and fragrance.

So, instead of even thinking about that terrible idea of pumpkin spice bologna, try these muffins, which are quite wonderful.

Pumpkin Raisin Muffins

  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 2/3 cup sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1-1/4 cups mashed pumpkin
  • 1/2 cup golden raisins

 Preheat the oven to 350 degrees. Grease 10 muffin tins. Mix the flour, baking soda, baking powder, salt, cinnamon, nutmeg and allspice together into a bowl. Beat the sugar, eggs, vegetable oil and mashed pumpkin together in an electric mixer set at medium for 2-3 minutes or until thoroughly blended and smooth. Add the flour mixture and beat at low speed for one minute to blend ingredients. Fold in the raisins. Pour the batter into the prepared tins. Bake for about 20 minutes or until a cake tester inserted into the center comes out clean.

Quick Pumpkin Spice Ice Cream

Pumpkin spice is the seasoning of the season. Not just for pie and cake. You see the words “pumpkin spice” everywhere, even for things like tea and coffee. Of course you really don’t get the pumpkin, just the spices that go with the pumpkin if you were making a pie.

So for all those pumpkin spice lovers, here’s a REALLY QUICK recipe you can make even an hour before Thanksgiving dinner or anytime at all. It’s for ice cream with all the fresh, warm spices we associate with the season.

This recipe takes about 5 minutes. The only thing you have to do ahead is remember to take the ice cream out of the freezer for about 15-20 minutes to soften.

If you are ambitious and have a few minutes more, spoon it into a graham cracker crust and you’ll have a pie. If you’re even more ambitious, grind up some gingerbread cookie crumbs (1-1/2 cups) mix them with 5 tablespoons of melted butter and press them into a 9-inch pie pan. Refrigerate the crust for an hour, then spoon the ice cream inside and freeze.

Quick Pumpkin Spice Ice Cream

1 quart vanilla ice cream, softened

1 cup mashed pumpkin (canned is fine)

1/2 cup dark brown sugar

1/2 teaspoon ground ginger

1/2 teaspoon ground cinnamon

1/2 teaspoon freshly grated nutmeg

1/4 teaspoon ground allspice

1/4 teaspoon ground cloves

Place ingredients in a bowl and mix ingredients thoroughly to blend them completely until smooth and uniform in color. Return to the freezer until chilled completely. Makes slightly more than one quart
