Banana Chocolate Cake

Same-old, same-old. The family came for the holiday (TG) and I have bananas leftover.

When there’s leftover bananas at my house I usually make banana bread or muffins or a plain banana cake of some sort. But I got some wonderful chocolate as a gift and wanted to use part of it for this cake. It’s rich and festive looking so I’m thinking of making this again for New Year’s weekend.

If you’re having a dairy meal for Hanukkah, this would make a marvelous dessert too!

streusel-topped BANANA-CHOCOLATE CAKE

Streusel:

  • 1/2 cup butter

  • 3/4 cup quick oats

  • 3/4 cup shredded coconut

  • 1/2 cup brown sugar

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 teaspoon salt

Melt the butter and set it aside. In a bowl, combine the oats, coconut, brown sugar, cinnamon, nutmeg and salt. Mix to distribute the ingredients evenly. Pour in the melted butter, mix to coat all the dry ingredients and set aside.

Cake:

  • 6 ounces semisweet chocolate (1 cup chocolate chips)

  • 1-2/3 cups all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 cup brown sugar

  • 1/2 cup butter

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 3 large ripe bananas, mashed

  • 1/3 cup buttermilk or kefir

  • 1 teaspoon vanilla extract

  • streusel (above)

Preheat the oven to 350 degrees. Grease and flour a 9”x13” cake pan or 2-9”round cake pans. Melt the chocolate and set it aside. Mix the flour, salt, baking powder and baking soda together in a bowl and set aside. In the bowl of an electric mixer set at medium speed, beat the brown sugar and butter for 2-3 minutes or until well blended. Add the eggs and vanilla extract and beat for one minute or until thoroughly blended. Add the bananas and buttermilk and beat for 1-2 minutes. Add the flour mixture and beat until the batter is well blended. Spoon the batter into the prepared pan. Pour the melted chocolate on top and use a knife to swirl it evenly into the batter. Scatter the crust mixture evenly over the top. Bake for about 45 minutes or until a cake tester inserted into the center comes out clean. Remove from the oven and let cool in the pan for 15 minutes. Remove to a cake rack to cool completely.

Makes one cake, serving 12-16

Banana Applesauce Muffins with Dried Cranberries


When life gives you leftover bananas, you make banana bread.

Except — if you don’t have enough bananas, you can make muffins.

I have an “all-purpose” banana muffin recipe that I tinker with every time I make it. Applesauce is always part of the base but I change the seasonings and sometimes the type of sugar.

Because it’s cranberry-orange season, this most recent version includes both those ingredients. But, you know — you can skip the dried cranberries and substitute raisins or chopped nuts or chopped fresh fruit, and so on. And you can switch to cinnamon or nutmeg or lemon peel instead of the orange peel.

Such a versatile recipe! And freezable too.

BANANA APPLESAUCE MUFFINS

  • 1-1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1-1/2 teaspoons grated orange peel

  • 6 tablespoons coconut oil, melted

  • 6 tablespoons sugar

  • 1 large egg

  • 2 bananas, mashed

  • 1/2 cup applesauce

  • 1 teaspoon vanilla extract

  • 1/2 cup dried cranberries (or raisins, chopped nuts, diced apple, etc.)

Preheat the oven to 400 degrees. Lightly grease 10 muffin cups (or use cupcake papers). Mix the flour, baking soda, baking powder, salt and orange peel together in a bowl. In the bowl of an electric mixer (or use a hand mixer) beat the coconut oil and sugar together on medium speed for about 2 minutes or until well combined. Add the egg and beat it in until thoroughly combined. Add the mashed bananas, applesauce and vanilla extract and beat for another minute or until the ingredients are well blended. Fold in the solid ingredients. Spoon equal amounts of the batter into the prepared muffin cups. Bake for 18-20 minutes, or until a cake tester inserted into center of muffin comes out clean.

Banana Bread with Orange Marmalade

Before Mother’s Day I bought the usual 16 tons of fruit my family consumes over a weekend, including several bananas.

But, as things happened, Covid called off the visit and I was left with 16 tons of fruit, including several bananas.

I used up the bananas in a couple of banana breads, including this one, to which I added orange marmalade. The marmalade added a nice tangy flavor and also a lovely, tender texture. Have a slice with creamy sweet butter for a real treat!

Banana Bread with Orange Marmalade

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 teaspoon salt

  • 3/4 cup sugar

  • 1/2 cup orange marmalade

  • 1/3 cup vegetable oil

  • 2 large eggs

  • 3 medium very ripe bananas

  • 1/4 cup orange juice

  • 1 teaspoon vanilla extract

Preheat the oven to 350 degrees. Grease a 9”x5”x3” loaf pan. Mix the flour, baking soda, baking powder, cinnamon, nutmeg and salt into a bowl and set it aside. Beat the sugar, marmalade and vegetable oil in a mixer (or with a handheld mixer and bowl) set at medium speed for 2-3 minutes or until the mixture is light and fluffy. Add the eggs one at a time, beating after each addition. Mash the bananas and add them to the sugar mixture. Beat thoroughly until the ingredients are well blended. Add the flour mixture and beat for 1-2 minutes to blend the ingredients thoroughly. Stir in the juice and vanilla extract. Pour the batter into the prepared pan. Bake for 50-55 minutes or until a cake tester inserted into the center comes out clean. Cool the bread in the pan 15 minutes. Remove the bread from the pan and let it cool on a cake rack.

Makes one bread serving 8-10

 

Banana Bread with Nuts and Raisins

My cousins are coming for our usual new year’s weekend.

What a grand way to end a terrible year.

We are all triple vaxxed and tested (negative).

This, to me, is thrilling enough.

We will watch Britbox murder mysteries — we all love them and there are some new goodies available.

We will eat and drink!

Last week I posted one of the desserts — M’hencha — that we will have (on New Year’s Eve when my sister-in-law and brother also come).

For dinner one night we will have Azerbaijani Plov, a fabulous melange of rice, dried fruit and meat (I am making it with lamb).

New year’s Eve is always an hors d’oeuvre fest. We space it out during the day, so we eat a few hors d’oeuvre at a time and wait for the next round.

So, I will serve Hot Dog en Croute and Almond Chicken Nuggets (plus olives, pickled beets and such).

Later, I will serve gougeres, Romanian Cheese Turnovers, cheese with Pepper Jam and a few other things.

During the weekend there’s breakfast of course, which consists of smoked fish and bagels for a couple of days.

During the day we also might find ourselves a bit peckish because I don’t serve lunch. We just “pick.”

This year, one of the pickings is going to be this Banana Bread. Which is terrific with tea or coffee. Ir’s good plain or spread with cream cheese. It’s even a good choice for dessert along with some ice cream. It’s a good nibble while watching the new series of Dalgliesh or rewatching Shetland.

We intend to have a good time.

Banana Bread with Nuts and Raisins

  • 1/4 cup butter

  • 1/4 cup coconut oil

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 2/3 cup sugar

  • 2 large eggs

  • 3 medium very ripe bananas, mashed

  • 1/3 cup yogurt

  • 1 teaspoon vanilla 

  • 1/2 cup chopped toasted nuts

  • 1/2 cup raisins

Preheat the oven to 350 degrees. Grease a 9”x5”x3” loaf pan. Melt the butter and coconut oil in a saucepan over low heat, set aside. Mix the flour, baking soda, baking powder, salt and cinnamon into a bowl and set it aside. Beat the sugar and melted butter/coconut oil mixture with a handheld or electric mixer set at medium speed for 2-3 minutes or until the mixture is well blended. Add the eggs one at a time, beating after each addition. Add the bananas and beat the mixture to blend the ingredients thoroughly. Add the flour mixture, stirring only enough to blend in the dry ingredients. Add the yogurt, vanilla extract, nuts and raisins and stir them in. Pour the batter into the prepared pan and bake for one hour or until a cake tester inserted into the center comes out clean. Cool the bread in the pan 15 minutes, then invert onto a cake rack to cool completely.

Makes one loaf. 

Banana Almond Streusel Bread

You think I’d learn! I always buy too many bananas when my kids and grandkids come, but when my cousins came for a sleepover, I thought for sure I wouldn’t have any leftovers. Senior citizens are supposed to eat bananas!

I bought 3 bananas and all 3 were uneaten.

So I made this, which is awesome.

This would be a good choice to end Rosh Hashanah dinner or for Break-the-fast.

Banana Almond Streusel Bread

Streusel:

  • 1/3 cup all-purpose flour

  • 1/4 cup chopped almonds

  • 1/4 cup brown sugar

  • 1/8 teaspoon cinnamon

  • 2 tablespoons melted coconut oil (or vegetable oil)

 Bread:

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 3/4 cup sugar

  • 1/3 cup vegetable oil (or melted coconut oil)

  • 2 large eggs

  • 3 medium very ripe bananas

  • 1/2 cup almond (or other non-dairy) milk

  • 1 teaspoon vanilla extract

  • 1/2 cup chopped almonds

Preheat the oven to 350 degrees. Grease a 9”´5”´3” loaf pan. Make the streusel by mixing the flour, almonds, brown sugar and cinnamon in a small bowl. Add the coconut oil and work it into the dry ingredients with fingers or a knife until mixture is crumbly. Set aside. 

Mix the flour, baking soda, baking powder and salt into a bowl and set it aside. Beat the sugar and vegetable oil with a handheld or electric mixer set at medium speed for 1-2 minutes or until the mixture is well mixed. Add the eggs one at a time, beating after each addition. Mash the bananas and add them to the mixture. Beat thoroughly until the ingredients are well blended. Add the flour mixture and beat for 1-2 minutes to blend the ingredients thoroughly. Beat in the almond milk and vanilla extract. Fold in the almonds. Spoon the batter into the prepared pan. Scatter the streusel on top. Bake for 1 hour or until a cake tester inserted into the center comes out clean. Cool the bread in the pan 15 minutes. Remove the bread from the pan and let it cool on a cake rack.

Makes 10-12 servings

 

Banana Chocolate Muffins

Before my cousins came for a long visit over the Memorial Day weekend I stocked up on all the foods they loved. We ate most of it, but Leslie told me that Neil also needed foods with potassium so I bought several bananas.

He ate a few.

Still. I bought too many. As usual. There were 3 left over.

So, banana muffins. These, with chocolate because, why not?

banana chocolate Muffins

  • 3 ounces semisweet chocolate

  • 1-3/4 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/3 cup sugar

  • 1/4 cup vegetable oil

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 3 ripe bananas, mashed

  • 3/4 cup water

  • 2 teaspoons cider vinegar

Preheat the oven to 400 degrees. Lightly grease a 10 muffin tins. Melt the chocolate and set it aside to cool. Combine the flour, baking soda, baking powder and salt in a bowl and set it aside. Beat the sugar and vegetable oil together in an electric mixer at medium speed for a minute or so or until well combined. Add the egg and vanilla extract and beat to blend ingredients thoroughly. Add the bananas and mix them in. Add the dry ingredients and beat for 1-2 minutes to blend them in thoroughly. Combine the water and cider vinegar, pour into the batter and beat the ingredients for 1-2 minutes or until thoroughly blended. Fill muffin tins with equal amounts of the batter. Spoon equal amounts of chocolate on top of each and use a knife to swirl some chocolate into each muffin. Bake for 20-25 minutes or until a cake tester inserted into the center comes out clean. Let the muffins cool for 15 minutes before removing them.

Banana Coconut Streusel Muffins

Another day, another leftover banana. Or two. Or three.

So I made these muffins.

The coconut shreds gave the streusel an even crispier texture than usual and was a really satisfying contrast to the soft cake part.

Remember these for Purim mishloach manot.

Banana Coconut Streusel Muffins

 Streusel:

  • 1/3 cup brown sugar

  • 3 tablespoons all-purpose flour

  • 2 tablespoons shredded coconut

  • 1/8 teaspoon cinnamon

  • 1-1/2 tablespoons solid coconut oil (or butter, shortening or margarine)

Make the streusel: mix the brown sugar, flour, coconut and cinnamon in a small bowl. Add the coconut oil and work it in with fingers or a knife until mixture is crumbly. Set aside.

 Muffins:

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 3 bananas, mashed

  • 6 tablespoons vegetable oil

  • 1/2 cup sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

Preheat the oven to 400 degrees. Lightly grease 10 muffin cups. Mix the flour, baking soda, baking powder, salt and cinnamon together in a bowl. In another bowl mix the bananas, vegetable oil, sugar, egg and vanilla extract until well blended. Spoon the banana mixture into the flour mixture and stir until just until combined. Spoon the batter into the prepared muffin cups. Top with the streusel mixture evenly over each muffin. Bake for 18-20 minutes, or until a cake tester inserted into center of muffin comes out clean.

Banana Muffins with Buttermilk or Yogurt

Today is National Muffin Day and it reminds me of what happened long ago when I first started working full time as a low-level attorney at a high-power firm, right after law school. All the other associates came to work carrying coffee and cartons of breakfast, which they proceeded to eat at their desks. Eggs, and everything with it.

I was always a yogurt woman, even back in the day when Dannon was the only one you could buy and there were only about 5-6 flavors.

But then someone told me about the blueberry muffins from the deli downstairs and unfortunately I tasted one. That was the end of my days of never even thinking about whether I gained a pound or two. I added a blueberry muffin to my yogurt breakfast.

Every day.

I gained a quick “freshman ten” and that was no small thing because back then I was really slim.

Alas, I gave up the morning muffins our of sheer vanity. But not my love of them.

Over the years I’ve occasionally made some at home. Blueberry. Cranberry-Orange. Pumpkin Spice. Zucchini. But it’s usually when we have sleepover guests because the muffin indulgence and the memory of how quickly they added to my girth has tempered my desire to eat them as often as I would like to.

Buying muffins is a no-no for me because the store-bought ones have become so ENORMOUS since the days when I had those luscious things from the deli.

I prefer the old-days size. The kind that comes out of a normal household muffin tin.

I made these Banana Muffins recently. They’re a lot less sweet the the typical muffin and have a vaguely robust hint of molasses. I’ve made these with stirred, plain yogurt for the times I didn’t have buttermilk on hand.

Banana Muffins with Buttermilk or Yogurt

  • 1-3/4 cups flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 3/4 teaspoon salt

  • 1 teaspoon cinnamon

  • 1/2 teaspoon freshly grated nutmeg

  • 2 tablespoons brown sugar

  • 3 very ripe bananas, mashed

  • 3/4 cup buttermilk or sour milk

  • 1/4 cup molasses

  • 3 tablespoons vegetable oil

  • 1 large egg

  • 1-1/2 teaspoons vanilla extract

  • 2-3 tablespoons old fashioned oats

Preheat the oven to 400 degrees. Lightly grease 9 muffin tins. Mix the flour, baking soda, baking powder, salt, cinnamon, nutmeg and brown sugar in a bowl. In a separate bowl, mix the bananas, buttermilk molasses, vegetable oil, egg and vanilla extract. Add the liquid ingredients to the dry ones and mix only long enough to combine thoroughly. Spoon the batter into the prepared muffin tins. Scatter the oats evenly on top of each muffin. Bake for 22-25 minutes or until a cake tester inserted into the center comes out clean.

Makes 9

 

Banana Oat Cake with Coconut

So the holidays came and went and the usual happened: I bought tons of fruit, all of it gone-replenished-gone again.

Except for a few bananas. I am always left with bananas.

Which is why there is always a banana bread or banana cake or banana muffins on my counter or in the freezer.

This one turned out to be one of the all-time favorites.

Banana Oat Cake with Coconut

  •  2 cups flour

  • 1/2 cup quick oats

  • 1/2 cup grated coconut

  • 2 teaspoons baking soda

  • 1 teaspoon baking powder

  • 1-1/2 teaspoons cinnamon

  • 1 teaspoon salt

  • 1 cup vegetable shortening

  • 1 cup sugar

  • 4 medium very ripe bananas, mashed

  • 4 large eggs

  • 1 teaspoon vanilla extract

  • 3/4 cup raisins

 

Preheat the oven to 350 degrees. Grease and flour a 10-inch (8-cup) bundt pan. Mix the flour, oats, coconut, baking soda, baking powder, cinnamon and salt together in a bowl. Set aside. In the bowl of an electric mixer beat the shortening and sugar at medium speed for about 2 minutes or until well blended. Add the bananas and blend them in thoroughly. Add the eggs and vanilla extract and beat the ingredients well. Add the flour mixture and beat until batter is well blended. Fold in the raisins. Pour the batter into the prepared pan and bake for 55-60 minutes or until a cake tester inserted into the center comes out clean. Remove from the oven and let cool in the pan for 10 minutes. Remove to a cake rack to cool completely.

Makes one cake, serving 12-16

Banana Bread with Cherries

This summer's cherries have been especially delicious. I've been buying (and eating) tons of them.

So, when I had to think of what to do with the usual leftover bananas, I decided to use some in a new version of Banana Bread. I also added some orange (peel and juice) -- just a hint to bring out the best in both of the fruits.

Pitting cherries can be a real drag. But there's an easy way to do it and you don't even have to buy a cherry pitter. Look here.

Banana BREAD with cherries

  • 2 cups all-purpose flour
  • 1 teaspoon grated fresh orange peel
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 3 medium very ripe bananas
  • 1/3 cup orange juice 
  • 1 teaspoon vanilla extract
  • 1 cup cut up fresh cherries

Preheat the oven to 350 degrees. Grease a 9”x5”x3” loaf pan. Mix the flour, orange peel, baking soda, baking powder and salt in a bowl and set it aside. Beat the sugar and vegetable oil with a handheld or electric mixer set at medium speed for 2-3 minutes or until the mixture is well blended. Add the eggs one at a time, beating after each addition. Mash the bananas and add them to the sugar mixture. Beat thoroughly until the ingredients are well blended. Add the flour mixture and beat for 1-2 minutes to blend the ingredients thoroughly. Stir in the juice and vanilla extract. Fold in the cherries. Pour the batter into the prepared pan. Bake for about 1 hour or until a cake tester inserted into the center comes out clean. Cool the bread in the pan 15 minutes. Remove the bread from the pan and let it cool on a cake rack.
