Vegetable Croquettes (Passover)

I was once in a pub in the west of England and ordered a dish called Bubble & Squeak. It’s simple, unfancy food, tasty and nourishing, consisting of mashed potatoes and cabbage fried to a crispy brown and topped with an egg.

It was magical.

So I made it many times at home, and, me being me, and this recipe being the kind that allows for endless variation, I added this and that to the potatoes, depending on what leftover vegetables I had. I used Brussels sprouts instead of cabbage (as do many restaurants in England); I’ve added corn, peas, carrots, spinach, broccoli and such. Once or twice I included cheese (feta, Parmesan) but I prefer the all-vegetable version best.

I don’t call it Bubble & Squeak (so named for the sounds it supposedly makes while being cooked), so I’ll just say: Vegetable Croquettes. We’ve eaten them as a side dish with meat but most of the time they are dinner, topped with a fried egg.

This is my Passover version. At other times of the year you can add beans/peas and coat the patties with bread crumbs.

Vegetable Croquettes

  • 1/2 cup vegetable oil, approximately

  • 1 medium onion, finely chopped

  •  1 cup chopped cooked cabbage

  •  2 chopped, cooked carrots

  • 10 ounce package frozen spinach, thawed

  • 3 cups mashed potatoes

  • salt and freshly ground black pepper to taste

  • 1/2 cup matzo meal, approximately

Heat 2 tablespoons vegetable oil in a sauté pan over medium heat. Add the onion and cook for 3-4 minutes or until softened. Spoon the onions into a bowl. Add the cabbage, carrots, spinach, mashed potatoes and some salt and pepper. Mix thoroughly and shape the mixture into 1/2-inch patties. Place the matzo meal on a plate. Press both sides of each patty into the crumbs. Refrigerate for at least 30 minutes. Heat 2-3 tablespoons vegetable oil in the sauté pan over medium heat. Fry the patties a few at a time (leave plenty of space between each) for 3-4 minutes per side or until crispy and golden brown, adding more vegetable oil to the pan as needed.

Makes 8-10

 

Roasted Potato Salad with Red Onions and Rosemary

If you’re getting out the grill to celebrate Lag BaOmer or because the warm weather is finally here or just because grilled food is so so good — have you decided about a side dish to go with those chicken legs or salmon steaks or hot dogs.

How about potato salad?

I make all sorts of potato salad, but because roasted potatoes are a classic food for Lag BaOmer, I went the extra step and roasted the potatoes for this version. The crispy edge added a really satisfying texture and the flavor was extra rich because the high heat caramelized the onions. I used a cast iron pan and suggest that for best results. Your oven is fine (instructions below) but if you have room for the pan on the grill — go for it and cook the entire feast outdoors.

This dish tastes best at room temperature, although my husband likes it hot, so, either way.

Roasted Potato Salad with Red Onions and Rosemary

  • 2 pounds “new” waxy potatoes (such as Red Bliss or baby Yukon Golds)

  • 1 small red onion, sliced

  • 5 tablespoons olive oil

  • 3 tablespoons lemon juice

  • 1 teaspoon Dijon mustard

  • 3 tablespoons chopped fresh parsley

  • 2 teaspoons chopped fresh rosemary

  • salt and freshly ground black pepper to taste 

Preheat the oven to 425 degrees. If you have a cast iron grill pan or frying pan, preheat it in the oven. Wash the potatoes and cook them in simmering water for 12-15 minutes or until tender. Peel the potatoes when they are cool enough to handle; cut them into bite size pieces and place them in a bowl with the onion slices. Pour 2 tablespoons of the olive oil over the vegetables, toss them to coat all sides and place them in the preheated pan (or use an ovenproof pan or baking sheet). Roast for 25-30 minutes, mixing 2-3 times, or until lightly browned and crispy. While the potatoes are cooking, mix the remaining olive oil, lemon juice and Dijon mustard in a large bowl. Add the roasted potatoes and onions when they are done. Add the parsley and rosemary. Toss the ingredients. Season to taste with salt and pepper. Let rest for at least 15 minutes before serving. Serve still warm or at room temperature.

Makes 4-6 servings

 

Honey-Spice Sweet Potatoes

It will be a tiny Thanksgiving dinner for us this year. It’s sad. And yet, I am still thankful that my kids and grandkids will celebrate separately and we will FaceTime during the day to send virtual hugs. And we will hope that next year we can go back to the large, crowded, noisy celebrations of days gone by.

Also, I am thankful that my brother and sister-in-law, who live nearby, will have dinner with us, seated far apart.

So, a scaled-down dinner. I know everyone will want sweet potatoes, so here is the scaled-down version of a dish I sometimes serve. It’s enough for 4 or 6 so maybe there will be some leftovers.

Btw, you can set this up ahead and pop it into the oven at the last minute.

Honey-Spice Sweet Potatoes

  • 3 medium sweet potatoes

  • 1/4 cup honey

  • 1/4 teaspoon salt or to taste

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon ground ginger

  • 1/8 teaspoon freshly ground nutmeg

  • 1 teaspoon freshly grated orange peel

  • 3 tablespoons orange juice

  • 1 teaspoon lemon juice

  • 1-1/2 teaspoons cornstarch

  • 1 tablespoon water

  • 1-1/2 tablespoons vegetable oil, butter, margarine or coconut oil

Peel the sweet potatoes, cut them into chunks and place in a saucepan. Cover with lightly salted water and bring to a boil over high heat. Lower the heat and cook for 15-18 minutes or until the potatoes are fork tender. Drain under cold water and place in a lightly oiled casserole dish. In another saucepan, combine the honey, salt, cinnamon, ginger, nutmeg, orange peel, orange juice and lemon juice. Bring the ingredients to a boil over high heat, stirring occasionally. Mix the cornstarch and water together to form a paste. Spoon the paste into the boiling honey mixture and stir briefly until the sauce thickens. Stir in the vegetable oil. Pour the sauce over the potatoes. Set aside. About a half hour before you are ready to serve the dish, preheat the oven to 375 degrees and bake the casserole for about 20 minutes.

Makes 4-6 servings

 

 

Roasted Potatoes with Preserved Lemon

I’ve used them on chicken — classic Moroccan dish. Delicious.

I’ve placed some under fish that I baked. Merveilleux!

But I have to say — with potatoes! Beyond awesome.

These:

Roasted Potatoes with Preserved Lemons and Rosemary 

  • 4 medium all-purpose potatoes, peeled and cut into small cubes

  • 2 tablespoons olive oil

  • Kosher salt and freshly ground black pepper to taste

  • Paprika

  • 2 teaspoons chopped fresh rosemary

  • 2 tablespoons finely chopped preserved lemon

Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper. Place the potato cubes on the parchment paper. Pour the olive oil over the potatoes and toss to coat each cube. Sprinkle with salt, pepper, paprika and rosemary. Roast for 15 minutes. Toss the potatoes and continue to roast for another 12-15 minutes. Sprinkle with the lemon. Return to the oven for a minute to heat the lemon. Serve immediately.

Makes 4 servings

 

 

Mashed Potato Pancakes

When I am going through periods of stress in my life, the food I want most is anything made with a potato.

So: these.

Mashed potato pancakes.

Just in time for St. Patrick’s Day.

I’m not Irish but will use any excuse to eat Irish food, which, despite the outcries of surprise from my Irish friends, is quite wonderful (fresh salmon, fabulous oatmeal, spectacular bread and the best potatoes ever).

I’ve been to Ireland a few times and have eaten mashed potato pancakes there, although I’ve never seen them crusted with panko; it’s usually plain old bread crumbs on the outside.

You can use either; I like the texture of panko better.

Mashed potato pancakes are very soft, so be careful when placing them in the pan and turning them.

These make a good side dish, but also a meal if you top them with a fried egg or two.

Mashed Potato Pancakes 

  • 3 cups cold mashed potatoes

  • 1 large egg

  • 2 chopped fresh scallions or 3 tablespoons chopped fresh chives

  • 1/3 cup bread crumbs

  • Salt and freshly ground black pepper to taste

  • 1 cup panko or bread crumbs, approximately

  • 5-6 tablespoons vegetable oil

Place the mashed potatoes, egg, scallions, 1/3 cup bread crumbs and salt and pepper to taste in  a bowl and mix thoroughly to blend all the ingredients. Shape the mixture into patties about 1/2-inch thick and refrigerate for at least one hour. Place the panko on a dish, then press each patty into the panko to coat both sides. Patties are very soft and fragile, so work carefully. Heat 2-3 tablespoons vegetable oil in a saute pan over medium-high heat. When the oil is hot, fry a few of the potato cakes for about 3 minutes per side, or until crispy. Be sure to leave room in the pan with space between each pancake. Repeat with the remaining potato cakes, adding more oil to the pan as needed.

Makes about 12

Potato and Cheese Kreplach

If I knew that the world was going to end or that it was my last day on earth, I would want potato-and-cheese kreplach with sour cream for dinner before I go.

For me, this simple, rustic, peasant dish is the ultimate.

I hadn’t had any for ages and ages and then, one day Ed and I were in Bratislava, Slovakia, perusing the menu at Houdini, a small restaurant conveniently located in our hotel.

They had potato-cheese pierogi!

Oh my.

There was no question about what I would order for dinner. I don’t even remember what else I could have chosen.

All I know is that the pierogies — the best I had ever eaten — came laden with sour cream and topped with chopped fresh chives.

I would go back to Bratislava just to have some more.

And I have been fantasizing about those things ever since.

However, because a trip to Slovakia is not in my immediate future, I decided to make some at home, but I made them kreplach shape in celebration of Purim, when it is customary to eat triangular shaped foods. These would be just perfect whether you make triangles or half moons.

If you’d like to make some, follow the recipe and look at the photos to see how the triangles are cut, filled and folded.

This is truly good food. Last day on earth worthy.

Potato Cheese Kreplach

FillinG:

  • 3 large Yukon Gold potatoes (about one pound), peeled, cut into chunks (about 3 cups mashed potatoes)

  • 2 tablespoons butter

  • 1 large onion, chopped

  • 1 cup farmer cheese

  • salt and freshly ground black pepper to taste

Place the potato chunks in a large saucepan, cover with water and bring to a boil. Lower the heat to a simmer and cook for about 15 minutes or until the potatoes are tender. Drain the potatoes and spoon into a bowl. While the potatoes are cooking, heat the butter in a sauté pan over medium heat. When the butter has melted and looks foamy, add the onions and cook, stirring occasionally, for 12-15 minutes or until soft and golden brown. Add the onions to the potatoes. Add the farmer cheese, sprinkle with salt and pepper and mix the ingredients until well blended. Set aside to cool before filling the dough.

DougH: 

  • 3-1/2 cups all-purpose flour

  • 1/2 teaspoon salt

  • 1/4 cup butter, cut into chunks

  • 2/3 cup water, approximately

  • 1 cup dairy sour cream

Place the flour and salt in a large bowl. Add the butter and work it into the dough until the mixture is crumbly. Add 1/2 cup of the water and the sour cream and mix the dough until it is smooth, soft and well blended. If the dough seems too dry, add more water. (You can do this in a food processor.) Let the dough rest for at least 30 minutes. Using portions of the dough, roll the dough on a floured surface to 1/8-inch thick. Cut the dough into 3-3-1/2” squares. Place about one tablespoon of the filling onto each square. Slightly wet 2 sides of the square along the border. Fold the dough over the filling to make a triangle, pressing down onto the moist strips to seal the dough. Use the back of a fork to press the edges. Bring a large pot of water to a boil. Add the filled kreplach, 8-10 at a time, and simmer for about 15 minutes or until they are tender. Remove the kreplach with a slotted spoon and set aside; repeat.

Serve with sour cream and chopped chives or scallion tops.

Makes about 30

 

Handmade Potato Chips with Smoked Salmon Tartare

Potato latkes for Hanukkah? Of course!

But homemade potato chips also satisfy the holiday requirement of crispy potato.

And SO MUCH EASIER! And HEALTHIER. Because the chips in my recipe are baked, not fried (you could fry them if you wish though). They are so crispy they crunch as if they were fried.

And of course a homemade potato chip topped with smoked salmon tartare is perfect for my New Year’s celebration.

If you’ve never tasted homemade potato chips you have missed something spectacular in life. Do try this soon, with or without the salmon. You could serve them plain or with sour cream or applesauce, just like latkes. If you want to get fancy, make a dip by mixing some chopped fresh herbs into creme fraiche or mascarpone cheese.

Potato Chips with Smoked Salmon Tartare 

  • One large Russet baking potato

  • Vegetable oil

  • salt

  • 1/4 pound smoked salmon pieces

  • 2 tablespoons finely chopped red onion

  • 1-2 tablespoons chopped fresh dill

  • a few drops of olive oil

  • few drops of lemon juice

  • cream cheese, dairy sour cream, crème fraiche or mascarpone cheese, optional

Preheat the oven to 425 degrees. Peel the potato and slice 1/8-inch thick slices. Wipe the slices with paper towels. Brush the slices on both sides with vegetable oil. Sprinkle lightly with salt. Place on a cookie sheet and bake for 9 minutes. Turn the slices over and bake for another 8-9 minutes or until golden brown. Remove from the oven and set aside. Chop the smoked salmon. Add the red onion and dill and mix thoroughly. Sprinkle in a few drops of olive oil and lemon juice and mix. For a dairy hors d'oeuvre, spread the chips with cream cheese, sour cream, crème fraiche or mascarpone cheese. Top with some of the salmon mixture. For a parve hors d'oeuvre, place the salmon mixture directly on the potato chips

Mashed Potatoes, Two Ways (dairy-free and dairy-loaded)

In our nuclear family of 11, there are the pro-potato people and the no-potato people.

I am a top level pro-potato person.

And as you can see from the photos, so are two of my grand daughters, who helped me make some mashed potatoes for dinner a while ago.

The recipe we made was a butter-cream-cheese-sour-cream indulgence. (It could be a meal in itself!) But we’ve also made dairy-free versions. Pro-potato people like it all ways.

dairy-loaded Mashed Potatoes

  • 2 pounds boiling potatoes (such as Yukon Gold)

  • 4 tablespoons butter, cut into chunks

  • 4 tablespoons cream cheese, cut into chunks

  • 1/2 cup dairy sour cream

  • 1/4 cup warm milk, approximately

  • salt and freshly ground black pepper to taste

Peel the potatoes and cut them into chunks. Cook them in lightly salted simmering water for about 20 minutes or until tender. Drain and return the potatoes to the pan. Cook briefly over low heat to evaporate the excess moisture. Mash the potatoes with a ricer or potato masher. Add the butter and cream cheese and mash them in thoroughly until the butter and cheese are completely blended in. Add the sour cream and blend in thoroughly. Mix in enough milk for desired consistency. Season to taste with salt and pepper.

Makes 6 servings

 

DAIRY-FREE Mashed Potatoes

  • 5 medium all-purpose potatoes such as Yukon Gold

  • 1/4 cup olive oil

  • 1 small onion, chopped

  • 1 large clove garlic, chopped

  • 3 tablespoons lemon juice

  • 3 tablespoons chicken or vegetable stock

  • salt to taste

  • pinch or two of cayenne pepper

  • 3 tablespoons fresh bread crumbs

Preheat the oven to 400 degrees. Peel the potatoes, cut them into chunks and cook them in lightly salted water for about 15 minutes, or until they are fork tender. While the potatoes are cooking, heat the olive oil in a sauté pan and add the onion. Cook, stirring occasionally, for about 3 minutes, then add the garlic. Cook for another 1-2 minutes, or until the vegetables are beginning to brown. Set aside. Drain the potatoes and mash them with a ricer or potato masher until the lumps have disappeared. Add the vegetables and olive oil and stir them in gently. Stir in the lemon juice, stock, salt and the cayenne pepper. Place the mixture in a baking dish. Sprinkle with the bread crumbs. Bake for 10-15 minutes or until the top is crispy and brown.

Makes 6 servings

Sweet Potato "fries"

I know that for many people, including my family, Hanukkah is a fried-food-fest. That once-a-year indulgence we look forward to with glee. Whether it's the fried latkes, the doughnuts, the chicken -- whatever -- it's the fried part that counts for us. That crunch! That crust! That crisp!

Oy.

So, sure, let's enjoy that first round of classic holiday favorites.

But Hanukkah is an 8-day holiday! So -- how about what I like to call "sort-of-fried" for the remaining days (and anytime after).

Mock fried.

That is, food cooked at high heat that gets crispy, liked fried food, but without the calories, the mess, the fuss and the smell. 

I realize it is NOT THE SAME AS FRIED FOOD.

I get it.

But it is still really tasty, and with the proper crispiness.

Like these sweet potato "fries."

Try these the next time you want something resembles fried without the frying.

Sweet Potato Fries

  • 3 pounds sweet potatoes
  • 3 tablespoons olive oil
  • sea salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon grated nutmeg
  • 1/8 teaspoon Aleppo pepper or to taste (or use cayenne pepper)

Preheat the oven to 425F degrees. Peel the sweet potatoes and cut them into julienne strips about 1/4-inch wide. Place the strips in a single layer on a cookie sheet. Pour the olive oil over the strips and toss to coat them all. Sprinkle the sea salt, cinnamon, nutmeg and pepper on top. Bake, tossing once or twice, for about 15 minutes, or until the strips are browned and crispy.

Makes 4-6 servings.

 

Roasted Potato Salad

Although my Mom was a really good cook, there were a couple of recipes of hers that I absolutely didn't like. For example, her potato salad, made with cooked, cut up all-purpose Eastern potatoes mixed with onions and Miracle Whip.

And because I didn't like that potato salad or even that style of potato salad, I have spent years experimenting with different recipes.

A while ago I tried making potato salad using roasted potatoes and it opened up a whole new range of options. Roasting gives an entirely different texture and flavor to potatoes and, of course to any salad you create with them.

There's a wonderful recipe for Roasted Lemon-Rosemary Potato Salad in my book, The Modern Kosher Kitchen.

This one was a big hit recently at a buffet get-together at my house. A good choice for a Labor Day picnic.

Roasted Potato Salad

  • 2-1/2 pounds small red bliss or baby Yukon Gold potatoes
  • 5 tablespoons olive oil
  • salt and freshly ground black pepper to taste
  • 1/2 cup chopped red onion
  • 1/4 cup white wine
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 tablespoons chopped fresh parsley
  • 2-3 teaspoons chopped fresh herbs such as thyme, savory, rosemary, marjoram (or a mixture)

Preheat the oven to 450 degrees. Wash and dry the potatoes and cut them into bite size pieces. Place the potatoes on a baking tray. Pour 2 tablespoons of the olive oil over the potatoes and toss to coat them. Sprinkle with salt and pepper and roast the potatoes for about 25 minutes or until tender. Remove the tray from the oven and place the potatoes in a bowl. Add the red onion and pour in the white wine. Toss the ingredients and let cool slightly. Whisk the remaining olive oil, white wine vinegar and mustard and pour over the potatoes. Add the parsley and herbs, toss and let stand for at least 15 minutes before serving.
