Passover Rhubarb Crisp

We are big rhubarb fans in our family. And unlike many rhubarb lovers, we like the stuff on the sour side, without the sugar overload. It's the way we got used to it as kids, the way my Mom made it.

I suppose she cut down on sweetening food as part of the need during World War II to ration sugar, and then just never went back to the old ways. In any event, she used to cook rhubarb all the time and serve it like applesauce. It was always kind of tart and wonderfully refreshing as a side dish to roasted chicken or turkey. 

Rhubarb is a natural for Passover because that's when the first of the new crop appears. You can get fresh stalks everywhere. We always have so many side dishes at our Seder that I don't cook it up the way my Mom did, to serve with dinner. But it does make a good dessert. Like in this recipe for Rhubarb Crisp.

I usually add a little less sugar than the recipe calls for, just because that's the way we like it. You can cut the sugar to 1/2 cup OR, if you have a real sweet tooth, add a bit more.

You can make this dessert a day or so ahead. It's a nice choice after a typical meat Seder meal, because it's parve (unless you switch to butter), but is also a good choice throughout the holiday.

 

PASSOVER RHUBARB CRISP

  • 2 pounds rhubarb

  • 3/4 cup sugar

  • 2 tablespoons potato starch

  • 1 teaspoon grated lemon peel

  • 3/4 teaspoon cinnamon

  • 2 cups crumbled coconut macaroons

  • 1/2 cup chopped almonds

  • 1/3 cup matzo meal

  • 1/4 cup brown sugar

  • 1/4 coconut oil or butter

Preheat the oven to 375 degrees. Cut the rhubarb into 1/2-inch thick slices and place in a bowl. Add the sugar, potato starch, lemon peel and cinnamon and toss the ingredients to distribute them evenly. Spoon the mixture into a baking dish. In a bowl combine the coconut macaroons, almonds, matzo meal and brown sugar. Add the coconut oil and work it into the dry ingredients until the mixture is crumbly. Place on top of the fruit. Bake for 40 minutes or until the crust is golden brown.

Makes 8-10 servings

Irish Oat Scones

  

 

 

I don't make scones very often because I have a difficult time limiting myself to one. I usually eat two. Or three. And then feel guilty and tell myself I will work out more. But of course, I don't do that either.

On the other hand --- tomorrow is Saint Patrick's Day and even though I am not Irish, I figure, why not take an opportunity to celebrate? I love Irish food, especially the scones.

So, here's my recipe. Whatever your heritage, try these on Saint Patrick's Day or whenever.

 

Irish Oat Scones

  • 1-1/2 cups all purpose flour
  • 1/2 cup quick oats
  • 2 tablespoons sugar
  • 2-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon grated fresh lemon peel
  • 3 tablespoons butter, cut into chunks
  • 3 tablespoons shortening, cut into chunks
  • 3/4 cup milk

Preheat the oven to 450 degrees. Lightly grease a cookie sheet. Combine the flour, oats, sugar, baking powder, salt and lemon peel in a food processor (or large bowl). Process briefly (or mix) to combine ingredients. Add the butter and shortening and process on pulse (or mix with your fingers or pastry blender) until the mixture looks crumbly. Add the milk and process (or mix) until a soft dough forms. Place the dough on a floured board, knead briefly and press into a disk about 3/4" thick. Cut out circles with a 3-inch cookie cutter. Place the circles on the prepared cookie sheet. Bake for about 15 minutes or until puffed and lightly browned.

Coconut Crusted Chicken

Coconut Chicken with Mango Salsa

I don't remember when chicken nuggets became one of the stock items on childrens' menus. But it's right up there with pizza, pasta and mac n' cheese.

Of course, grownups like chicken nuggets too. I suppose it's the anything crunchy-fried-golden-brown thing.

Most recipes give chicken nuggets a bread crumb crust, but during Passover there are other alternatives. Check out my recipe below, which has a matzo meal and coconut crust. I keep the pieces bigger than standard nuggets so they feel more like dinner to adults, but you can cut the chicken into smaller chunks to make actual nuggets (which are terrific as hors d'oeuvre).

The coconut gives the chicken a lovely sweet taste, which is fine all by itself, but grown up palates might want to balance that with a refreshing, citrusy, slightly spicy mango salsa.

Coconut Chicken

 

  • 1/4 cup potato starch
  • 2 large eggs
  • 1 cup unsweetened packaged shredded coconut
  • 1/2 cup matzo meal
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1-1/2 pounds boneless chicken
  • vegetable oil for frying

 

Place the potato starch in a dish. Beat the eggs in a second dish. Combine the coconut, matzo meal, salt, paprika and garlic powder in a third dish. Slice the chicken into strips (about 2-inches long, 1-inch wide). Press the strips, one by one, into the potato starch, covering the entire surface. Immerse the strips in the egg, making sure to cover the entire surface. Press the egg-coated chicken strips into the coconut mixture, making sure to coat the entire surface. Place the strips on a cake rack and let air dry for at least 15 minutes. Heat about 1/8-inch vegetable oil in a large sauté pan over medium-high heat. When the oil is hot enough to make a matzo crumb sizzle, add the strips a few at a time, leaving room between each strip, for about 2 minutes per side, or until golden brown and crispy. Drain on paper towels and repeat with the remaining strips. Serve plain or with Mango Salsa.

 Makes 4 servings

 Mango Salsa

  • 2 cups diced fresh mango
  • 1/2 cup chopped purple onion
  • 1 small chili pepper, deseeded and chopped
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon chopped fresh ginger
  • 1 clove garlic, finely chopped
  • 3 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil
  • salt to taste

Place the mango, purple onion, chili pepper, mint, ginger, garlic, lime juice, honey and vegetable oil in a bowl and toss the ingredients to distribute them evenly. Sprinkle with salt to taste. Let rest for at least 15 minutes before serving.

Makes about 2-1/2 cups

The Gift

One of the loveliest, most heartwarming traditions of Purim is mishloach manot, the act of giving gifts of edible food (and drink) to our friends, neighbors and those in need.

Every year I bake or cook something to give away. This year it was Banana Double Chocolate Swirl Cupcakes. But other times I've given Dried Apricot, Pear and Raisin Chutney, Banana Mango Bread with Chocolate Chunks, Candied Kumquats and lots more.

Yesterday, I got mishloach manot from an unexpected source: NoMoo Cookies!

There, on my front porch was this box of one dozen giant Choco-lift with Cherry Cookies! Just for me.

Now, you may have read my review of NoMoo cookies a while ago. If not, take a look. These are fabulous, dairy-free and kosher.

The Choco-lift with Cherry is a limited edition cookie. I have to say, the cherry part made me think of blooming spring cherry trees, which is quite a lovely image today as more snow is falling on the already 2 or 3 feet of it in my backyard. The chocolate part was rich and not too sweet (over-sweet is one of my pet peeves with most packaged cookies).

I've already finished one. My husband finished one. The rest went right into the freezer because even though these cookies are terrific, fresh from the package, we also like them hard and cold.

That's a good cookie.

Does Making it Three-Cornered Mean it's Hamantaschen?

In short, yes! 

Last year Soom Foods, who produces absolutely fabulous tahini, sponsored a contest which was basically to come up with an unusual or new riff on an old Purim favorite: hamantaschen.

I won!

I won with this idea: Spiced Lamb in Phyllo Hamantaschen with Lemon-Tahini Sauce. Sure, it's not classic cake-dessert hamantaschen with prune or poppyseed filling. But, although I love those (all year, not just on Purim), I don't think hamantaschen has to be a sweet, cakey version in order to qualify. 

My prize for winning was a jar of Soom sesame butter. What could be better when you want to make hummus or tahini sauce or anything else using sesame paste (butter, tahini)?

I've gone through a few jars of the stuff since then.

So here, folks, just in time for Purim, is:

 

Spiced Lamb in Phyllo Hamantaschen with Lemon-Tahini Sauce

  • olive oil

  • 1 large onion, finely chopped

  • 1-1/2 teaspoons finely chopped ginger

  • 1 large clove garlic, finely chopped

  • 1-1/2 pounds ground lamb

  • 3 tablespoons chopped fresh mint

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • salt to taste

  • 1/2 cup currants or raisins

  • 1/3 cup pine nuts

  • 12 sheets phyllo dough, approximately

Heat 2 tablespoons olive oil in a sauté pan over medium heat. Add the onion, ginger and garlic and cook for about 2 minutes, or until slightly softened. Add the lamb and cook, stirring occasionally, for 3-4 minutes or until the meat is completely brown. Stir in the mint, cinnamon, nutmeg, salt, currants and pine nuts. Set aside to cool.

Preheat the oven to 375 degrees. 

Place the phyllo sheets on a cutting board and cut out circles using a 3-inch cookie cutter (work with about 6 layered sheets at a time; you'll need about 12 sheets in all; some will crinkle and dry and need to be discarded). Keep the cut out phyllo circles in a pile, covered with plastic wrap. Working with three circles at a time, brush each circle with a small amount of olive oil and place a heaping tablespoon of the lamb filling in the center of the circle. Bring up the sides to form a triangle and press the edges together. Place each triangle on a baking sheet. Repeat the process until all the lamb has been used (about 24 filled triangles).

Bake the triangles for about 35 minutes or until browned and crispy. Serve hot with Lemon-Tahini Sauce.

Make the sauce while the triangles are baking:

 

Lemon-Tahini Sauce

  • 1/2 cup tahini (sesame paste, sesame butter)

  • 1/3 cup lemon juice

  • 1/4 cup water

  • 2 tablespoons olive oil

  • 2 cloves garlic, finely chopped

  • salt to taste

Stir the tahini in the jar to blend in any oil that has risen to the top. Spoon the 1/2 cup tahini into a bowl. Add the lemon juice and blend it in. Add the water, olive oil, garlic and salt to taste. Blend thoroughly (use a food processor or immersion blender).

Makes one cup

German star cookies. To remind you that we celebrate a new year, new beginnings, being with loved ones. Sweet. Lovely. Gluten-free too.

Zimtsterne

  • 3 large egg whites

  • 1-1/4 cups sugar

  • 1/2 teaspoon salt

  • one pound finely chopped almonds or hazelnuts, approximately

  • 2 teaspoons ground cinnamon

  • 2 teaspoons grated fresh lemon peel

  • confectioners sugar**

Line a cookie sheet with parchment paper. Preheat the oven to 275 degrees.

Beat the egg whites until they stand in soft peaks. Continue to beat the whites, gradually increasing the speed and gradually adding all the sugar and salt, for 6-8 minutes or until they whites stand in glossy, stiff peaks. Remove about 3/4 to one cup of this mixture to a small bowl and set it aside.**

In another bowl, combine the nuts, cinnamon and lemon peel. Fold the nut mixture into the egg white mixture in the bowl until it is uniform in color. Spoon the mixture onto parchment paper and flatten the “dough” sightly. Let stand for about 15 minutes. Place another piece of parchment paper on top. Roll the dough about 1/2-inch thick. Remove the top piece of parchment paper. One at a time, cut out star shapes from the dough (the dough is sticky and difficult to work with). Place each star on the parchment paper on the cookie sheet.

When all the stars are cut, use the reserved sugar mixture and spread on top of each star.  Let rest for 60 minutes.

Bake for about 25-30 minutes.

Makes about 42

**you can skip this meringue coat and bake the cookies uncoated (in this case, do not set aside the 3/4 cup meringue. You might need about 1/2 cup more ground nuts to make the dough less sticky). When they are baked and cooled, mix about 1/2 cup confectioners sugar with enough water to make a paste and use a small spoon to cover the cookies with the sugar paste. Let dry and serve.

Plum Torte with Oat Streusel 

It wouldn’t be the Jewish High Holiday season if you didn’t see at least one recipe for Plum Torte.

I suppose it’s because the holidays come at around the same time as the harvest for those small, dark purple Italian prune plums and what could be better than dessert made with the newest, freshest, soon-to-disappear seasonal fruit? (Although the torte recipe is so versatile that my niece Rachel Vail, renowned children’s book author, once made it with pears.)

I’ve made several versions over the years, including the NYTimes recipe and my Aunt Beck’s famous apple cake made with plums.

This year I’m baking a new variation for the holidays. If Plum Torte is so delicious, can’t it be even better — and lovelier looking — with a streusel top?

Yes!

Here it is:

PLUM CAKE WITH OAT STREUSEL

CAKE: 

  • Streusel (recipe below)

  • 1/2 cup butter, melted and cooled

  • 2 cups all-purpose flour

  • 1/2 cup sugar

  • 1 tablespoon baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon salt

  • 2 teaspoons grated fresh orange peel

  • 2 large eggs

  • 1 cup milk

  • 12 Italian prune plums, pitted and sliced

Preheat the oven to 350 degrees. Make the streusel and set it aside. Lightly grease a 9-inch springform pan. Melt the butter and set it aside to cool. Combine the flour, sugar, baking powder, baking soda, salt and orange peel in the bowl of an electric mixer. In another bowl, combine the eggs, milk and melted butter. Pour the liquid ingredients into the dry ones and beat for about one minute, until smooth. Turn the batter into the prepared cake pan. Top with the plum slices. Cover with the streusel. Bake for about 45 minutes or until a cake tester inserted into the center comes out clean. Let cool in the pan for 15 minutes. Remove the outer ring from the pan and let the cake cool completely.

Makes one cake serving 8 people

STREUSEL:

  • 1/2 cup rolled oats

  • 1/3 cup all-purpose flour

  • 1/2 cup packed light brown sugar

  • 1/8 teaspoon salt

  • 4 tablespoons cold unsalted butter, cut into small pieces

Mix the oats, flour, brown sugar and salt in a bowl. Add the butter and work it into the flour mixture until it resembles coarse crumbs. Set aside.

 

Matzo Farfel Fattoush

Every year I buy a kitchen’s worth of Passover ingredients and most of it gets eaten, except for the matzo farfel. I know you can use matzo farfel for stuffing, matzo brei, granola and other foods. But I don’t. A few family members like it cooked like oatmeal, for breakfast, but that’s about it. So I always have a lot left over.

Last year I decided to experiment a bit and see how I could use matzo farfel to advantage.

Fattoush, a light and refreshing salad, was a big winner. 

The word fattoush means “crumbled bread” in Arabic and the salad is pretty basic — seasonal vegetables such as tomatoes, cucumber and greens mixed with toasted flat bread.

During the year it’s a good way to use up stale bread. During Passover, matzo farfel is perfect.                                                                                                                                                                                                                                        

Matzo Farfel Fattoush

 

  • 2 cups matzo farfel
  • 6 tablespoons olive oil
  • 3 cups shredded Romaine lettuce (6-8 large leaves)
  • 2 medium tomatoes, chopped
  • 1 medium cucumber, chopped
  • 1 ripe avocado, peeled and chopped
  • 1/2 medium red bell pepper, deseeded and chopped
  • 2-3 scallions, chopped
  • 1/2 cup chopped parsley
  • 1/4 cup chopped mint
  • 1/4 cup lemon juice
  • salt and freshly ground black pepper to taste

 

Preheat the oven to 350 degrees. Place the farfel on a baking sheet. Pour 2 tablespoons olive oil over the farfel and toss, coating all the pieces. Bake for about 15 minutes, tossing the farfel occasionally, or until it is lightly browned. Remove from the oven and let cool. Place the lettuce shreds, tomatoes, cucumber, avocado, bell pepper, scallions, parsley and mint in a bowl. Mix the remaining 4 tablespoons olive oil and the lemon juice together. Pour the dressing over the salad, sprinkle with salt and pepper to taste and toss the ingredients. Add the toasted farfel, toss again and let rest for a few minutes before serving.

 

Makes 8 servings

Meyer Lemon Yogurt Pie

When life gives you lemons, make lemonade, right? Or lemon pie, lemon bars, lemon vinaigrette. And so on.

That’s exactly what I did, years and years ago, when one of Ed’s business associates moved to California and mentioned the lemon trees in his backyard. He had so many lemons that he wanted to send us a box.

They were the strangest looking lemons I’d ever seen. Thin-skinned and vaguely orange. They also tasted sweeter than the standard, in fact, they tasted almost as if it were some kind of lemon mixed with an orange.

This was in the pre-Google search era. No one I knew had ever heard of a Meyer lemon.

In fact, Meyer lemons, which seem so familiar now, popped into popularity only about a decade ago. And when they started appearing in supermarkets during the winter I realized what I had in that box all those years before.

I had used those lemons in all the recipes I cooked that called for lemon juice and peel. It worked, though not perfectly. Meyer lemons are sweeter and they don’t have the tang and pop of a standard lemon, so they’re not ideal for recipes that need a lemony acidity.

On the other hand, because the flesh is sweeter than the more usual lemon, Meyer lemons are perfect for cookies and quick breads. I also slice them and use it as a bed for roasted fish. I make Meyer Lemon Chutney.

And this fabulous, rich, sweet and mildly tangy Meyer Lemon Yogurt Pie. 

Meyer Lemon Yogurt Pie

  • 1 fully baked pie crust or Graham Cracker crust
  • 1 cup sugar
  • 5 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1/2 cup cold water
  • 1/3 cup fresh Meyer lemon juice
  • 2 large eggs
  • 1-1/2 cups boiling water
  • 1-1/2 tablespoons butter
  • 2 tablespoons freshly grated Meyer lemon peel
  • 1 cup plain Greek style yogurt
  • whipped cream

Bake the crust or set it aside. Or, make a graham cracker crust (or use a store bought crust).* Combine the sugar, cornstarch, salt, cold water and Meyer lemon juice in a saucepan. Add the eggs and blend them in thoroughly using a whisk. Gradually add the boiling water and whisk the ingredients until the mixture is smooth. Place the saucepan over medium heat and bring the mixture to a boil. Continue to cook, whisking constantly, for one minute. Remove the pan from the heat and stir in the butter and Meyer lemon peel. Let the mixture rest for 15 minutes. Add the yogurt and whisk it in. Pour the mixture into the pie crust and chill in the refrigerator until cold, about 4 hours. Top with whipped cream and serve.

Makes one 9-inch pie

*to make a graham cracker crust: preheat the oven to 350 degrees. Combine 1-1/2 cups crushed graham crackers and 5 tablespoons melted butter. Mix until all the crumbs are coated. Press the mixture onto the bottom and sides of a 9-inch pie dish. Bake for 10 minutes. Remove from the oven and let cool.

Pumpkin Muffins with Kefir and Pepitas 

As soon as I see that pumpkins have replaced the corn and tomatoes at the market I start hungering for food that’s autumn-like. Mostly pumpkin bread and muffins to snack on when I need a little something in the late afternoon with my last cup of coffee for the day. 

I don’t make pumpkin muffins as often as I do banana bread, but almost. This is my latest version, which has kefir because I happened to have some in the fridge. But buttermilk is fine too. 

Reheat leftovers in a toaster oven for a few minutes if you need a quick breakfast. 

Btw, I used to bake and mash the pumpkin insides to get the puree, but most of the time I use canned pumpkin or squash. NOT pumpkin pie mix. I want to mix in the spices of my choice, not theirs.

Pumpkin Muffins with Kefir and Pumpkin Seeds

  • 3  tablespoons butter

  • 1-3/4 cups flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon cinnamon

  • 1 teaspoon freshly grated nutmeg

  • 1/8 teaspoon ground cloves

  • 2 tablespoons brown sugar

  • 1 cup mashed pumpkin (not pumpkin pie mix)

  • 3/4 cup kefir

  • 1/4 cup molasses

  • 1 large egg

  • 2-3 tablespoons crushed pumpkin seeds 

Preheat the oven to 400 degrees. Lightly grease 9 muffin tin cups. Melt the butter and set it aside to cool. Sift together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves and brown sugar. In a separate bowl, combine the pumpkin, kefir, molasses, egg and cooled, melted butter. Add the liquid ingredients to the dry ones and mix only long enough to combine. Spoon the batter into the prepared muffin tin cups. Scatter the pumpkin seeds evenly on top of each muffin. Bake for 22-25 minutes or until a cake tester inserted into the center comes out clean.
