Pomegranate Chicken Wings

I know that Labor Day is not the end of grilling season, but somehow it's a reminder that so much in our lives is about to change. In the month or so ahead, leaves turn to red and gold. School begins. There's a vague chill in the air at night. The sun sets earlier and nighttime comes sooner.

I also realize that many people continue to grill outdoors throughout the year.

I'm not one of them. If it's below 45 I don't feel like slaving over a hot grill in the cold night air.

So, knowing how way leads on to way, I am making the most of the grilltime that's left.

These wings will be on my menu soon, before I close up shop for the winter.

Fyi, you can use the glaze for other chicken parts and bake the pieces n the oven or broil them in an oven broiler. It’s also fine to use for basting a whole roasting chicken.

 

Pomegranate Wings

  • 2 pounds chicken wings

  • olive oil (about one tablespoon)

  • 1/2 cup pomegranate jelly

  • 2 tablespoons orange juice

  • 1 tablespoon cider vinegar

  • 1 tablespoon brown sugar

  • 1 teaspoon chopped fresh ginger

  • 2 cloves garlic, finely chopped

  • 2 scallions, chopped

  • pinch or two cayenne pepper

  • salt to taste

Preheat an outdoor grill or oven broiler. Wash and dry the wings and cut them into separate pieces. Brush with olive oil and grill, turning once, for 8-10 minutes or until lightly browned. While the wings are cooking, mix the pomegranate jelly, orange juice, cider vinegar, brown sugar, ginger, garlic, scallions cayenne pepper and salt to taste until well blended. Brush this glaze on the wings and cook for another 10-12 minutes, turning the wings occasionally and brushing with remaining glaze, until crispy and fully cooked.

Roasted Potato Salad

Although my Mom was a really good cook, there were a couple of recipes of hers that I absolutely didn't like. For example, her potato salad, made with cooked, cut up all-purpose Eastern potatoes mixed with onions and Miracle Whip.

And because I didn't like that potato salad or even that style of potato salad, I have spent years experimenting with different recipes.

A while ago I tried making potato salad using roasted potatoes and it opened up a whole new range of options. Roasting gives an entirely different texture and flavor to potatoes and, of course to any salad you create with them.

There's a wonderful recipe for Roasted Lemon-Rosemary Potato Salad in my book, The Modern Kosher Kitchen.

This one was a big hit recently at a buffet get-together at my house. A good choice for a Labor Day picnic.

Roasted Potato Salad

  • 2-1/2 pounds small red bliss or baby Yukon Gold potatoes
  • 5 tablespoons olive oil
  • salt and freshly ground black pepper to taste
  • 1/2 cup chopped red onion
  • 1/4 cup white wine
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 tablespoons chopped fresh parsley
  • 2-3 teaspoons chopped fresh herbs such as thyme, savory, rosemary, marjoram (or a mixture)

Preheat the oven to 450 degrees. Wash and dry the potatoes and cut them into bite size pieces. Place the potatoes on a baking tray. Pour 2 tablespoons of the olive oil over the potatoes and toss to coat them. Sprinkle with salt and pepper and roast the potatoes for about 25 minutes or until tender. Remove the tray from the oven and place the potatoes in a bowl. Add the red onion and pour in the white wine. Toss the ingredients and let cool slightly. Whisk the remaining olive oil, white wine vinegar and mustard and pour over the potatoes. Add the parsley and herbs, toss and let stand for at least 15 minutes before serving.

Oat-Topped Banana Brown Sugar Muffins

  • 1-1/4 cups all-purpose flour
  • 1/2 cup plus 2 tablespoons quick cooking oats
  • 1/4 cup brown sugar
  • 1-1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 2 small very ripe bananas, mashed
  • 1/2 cup plain yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract

Preheat the oven to 400 degrees. Grease 12 muffin tins. Mix the flour, 1/2 cup oats, brown sugar, baking powder, salt, baking soda and cinnamon together in a bowl. In a second bowl, mix the banana, yogurt, eggs and vanilla extract. Pour the liquid ingredients into the flour mixture and stir just to bend ingredients. Spoon equal amounts into the greased muffin tins. Sprinkle the tops evenly with the 2 tablespoons oats. Bake for 18-20 minutes or until a cake tester inserted into the center comes out clean.
